Grilled Nectarine and Prosciutto Submarine Sandwich

Great office lunch to share or serve with soup for a quick dinner

  • Ingredients
  • 1/2 lb. Prosciutto, thinly sliced
  • 2 Nectarines, pitted & sliced
  • Arugula, 1 large handful, washed
  • 1 Loaf Multi-Grain or Wheat Bread
  • Italian Vinaigrette OR Chipotle Mayonnaise, to taste
  • Optional Cheese, 4 slices Provolone


Grill nectarine slices. Slice loaf of bread in half, lengthwise. Spread with mayo and top with cheese, if using. Add Prosciutto, grilled nectarine slices, and arugula. Drizzle with Italian Vinaigrette, if using. Slice into 4 sections. Then slice each section in half.

Makes 4 servings
