No-cook Homemade Vanilla Ice Cream

Super simple no-cook recipe with a sugar-free option

  • Ingredients Ice Cream
  • 2C Heavy Whipping Cream
  • 2C Half-and-half
  • 1C Sugar or 100% Liquid Stevia Drops, to taste
  • 2t Pure Vanilla Extract
  • Ingredients Waffle Cones
  • 2 Eggs
  • 1/2C Sugar
  • 2/3C All-purpose Flour
  • 1/4C Butter {1/2 stick}, melted
  • 1/4C Whole Milk

Instructions Ice Cream

Add all ingredients to large mixing bowl. Stir until sugar dissolves. If using Stevia mix all other ingredients and then add a few drops of Stevia at a time, tasting until mixture is sweet enough. Pour mixture into frozen compartment of ice cream machine and follow manufacturer's directions.

Makes 1-1/2 quarts

Instructions Waffle Cone

Melt butter and set aside. In medium-size mixing bowl whisk eggs. Add sugar and continue whisking about 1 minute. Whisk milk in. Stir flour into mixture. Heat waffle cone maker according to manufacturer's instructions. Add 2-3 tablespoons of batter, cook until golden brown. Remove waffle and shape around a cone roller. Cool on wire baking rack before using.

Makes 10 waffle cones
