Juice key limes. Pour juice into large glass bowl through a fine mesh strainer or use bottled Key Lime juice. Mix in sugar until dissolved. Add cream and half and half, mix well. If using liquid Stevia instead of sugar, add to taste. Turn into frozen compartment of a commercial ice cream machine. Follow manufacturers instructions. Transfer finished sherbet to a container with a lid. Cover and freeze 20 to 30 minutes before serving to firm the sherbet up.
